Ingredients (for 4):
- Potato - 1
- White mushroom - 500 g
- Brown mushroom - 300 g
- Onion - 1
- Garlic - 4 cloves
- Madeira - 20 ml
- Chicken stock - 600 ml
- Milk - 250 ml
- Cream - 10 ml
- Salt - 1 tsp
- Black pepper finely - 1/2 tsp
Procedures:
1. Cut the mushroom into slices.
3. Cut the garlic finely.
4. Peel and cut the potato into cubes.
5. Saute the onion with oil for a while.
6. Add in garlic and continue to cook until the onion is softened.
7. Add in the potato and mushroom and continue to cook, until the jus is evaporated to almost dry.
8. Add Madeira and cook briefly to remove the alcohol.
9. Add chicken stock and let the soup simmer for 30 minutes.
10. Add milk to the soup and mix well.
11. Blend the mixture until smooth. Reheat and season with salt and black pepper finely.
12. Use a spoon to pour some cream on top, sprinkle with some parsley for decoration if available.
