Ah Sir's Recipe - 38. Pan-fried Duck Breast

Ingredients (for 4):

  • Duck breast - 2
  • Onion shredded - 3 oz
  • Carrot shredded - 3 oz
  • Celery shredded - 2 oz
  • Marjoram - 1 tsp
  • Garlic finely - 1.5 tsp
  • Salt - 1 tsp
  • Black pepper finely - 1/2 tsp
  • Cooking oil - 1 tbsp
  • Red wine - 2 oz
Procedures:

1. De-froze the duck breast and remove the fat layer.

2. Shred the vegetables and put inside a mixing bowl.

3. Add marjoram, garlic, salt, black pepper and cooking oil. Squeeze until the juices come out from the vegetables.

4. Add the red wine and marinate the duck breast for 2 hours.

5. Remove the vegetables and pan-fry the duck breast until golden.

6. Put the duck breast into oven to continue to cook until medium rare.

7. Serve with the balsamic vinegar sauce.
