Ingredients (for 4):
- Eggplant - 1
- Olive oil - 2 tbsp
- Onion finely - 4 oz
- Garlic finely - 1 tsp
- Minced pork - 4 oz
- Tomato paste - 2 oz
- Oregano - 1 tsp
- Salt - 1/2 tsp
- Black pepper finely - 1/4 tsp
- Mozzarella cheese - 1 tbsp
- Parmesan cheese - 2 tsp
- Paprika - 1/4 tsp
Procedures:
1. Cut the eggplant in half and blanch in boiling water for 4-5 minutes.
2. Remove the flesh from the eggplant, and cut into cubes.
3. Stir-fry the onion with olive oil, and then add garlic.
4. Add the minced pork and tomato paste and continue to stir-fry until fragrant.
5. Add oregano, eggplant cubes and a little water to cook until well-done. Season with salt and black pepper.
6. Stuff the fillings into the eggplant skin, then place the Mozzarella on top. Sprinkle with Parmesan and Paprika before putting into over to bake until golden brown.
