Ingredients (for 4):
- Fresh mushroom - 8
- Oyster mushroom - 2 oz
- Fresh shiitake mushroom - 2 oz
- Butter - 2 oz
- Flour - 2 oz
- Celery - 1 oz
- Onion - 1 oz
- Chicken stock - 2 lb 8 oz
- Bay leaf - 1
- Milk - 2 oz
- Whipping cream - 1 oz
- Salt - 1 tsp
- White pepper powder - 1/4 tsp
Procedures:
1. Saute the celery, onion and bay leaf with butter.
2. Add the flour and use low heat to saute for a while.
3. Add the chicken stock and cook until boiling.
4. Add the mushroom and cook for 30 minutes.
5. Blend the ingredients and then reheat the soup.
6. Add the milk and cream, mix well and then season with salt and white pepper powder.
