Ingredients (for 4):
- Yi noodles - 240 g
- Straw mushroom - 250 g
- Hotbed chives - 150 g
- Garlic - 4 cloves
- Oyster sauce - 1 1/2 tbsp
- Soy sauce - 1 tbsp
- Dark soy sauce - 1 tsp
- Sugar - 1/2 tsp
- Chinese yellow wine - 1 tsp
- Chicken stock - 1 cup
- Sesame oil - 1/2 tsp
Procedures:
1. Clean the straw mushroom, cut into thick slices, then blanch in hot water and then flush with cold water.
2. Put the yi noodles in boiling water, boil till softened, then remove and drip dry. Use chopsticks to loosen.
3. Cut the hotbed chives into sections of about 6cm.
4. Chop the garlic finely.
5. Mix the oyster sauce, soy sauce, dark soy sauce, sugar and chicken stock as sauce.
6. Heat the wok with a tablespoon of oil, then use medium heat to cook the garlic until fragrant.
7. Add the straw mushroom to cook for a minute, sprinkle with Chinese yellow wine.
8. Add the sauce to cook till boiling.
9. Add the yi noodles and hotbed chives to mix well, then cook until the sauce is fully absorbed. Add the sesame oil and serve.
