Ingredients (for 4):
- Smoked bacon - 250 g
- Olive oil - 3 tbsp
- Whipping cream - 400 ml
- Salt - 2 tsp
- Egg tagliatelle - 400 g
- Egg yolk - 4
- Parmesan cheese - 80 g
Procedures:
1. Remove the rind from the bacon and cut into strips.
2. Place a large saucepan over a low heat, add the oil and then the bacon, fry gently for a while until the bacon has browned.
3. Set aside one-eighth of the cream and then add the rest to the bacon. Simmer for 10 minutes. Season with salt and pepper before removing from the heat.
4. Bring a pot of water to the boil, add the salt and pasta. Cook for 5-6 minutes (check package).
5. Whisk together the egg yolks and the reserved cream.
6. Drain the pasta, then add the bacon cream to the pasta.
7. Stirring constantly, add the egg yolk and cream mix.
8. Serve with the grated Parmesan cheese.
