Ingredients (for 4):
- Onion - 70 g
- Garlic clove - 1
- Red bell pepper - 1
- Yellow bell pepper - 1
- Green bell pepper - 1
- Aubergine - 1
- Zucchini - 2
- Tomato - 2
- Olive oil - 1 tbsp
- Salt cod - 150 g
Procedures:
1. Cut the onion into 2 cm pieces.
2. Chop the garlic finely.
3. Remove the stalk and seeds from the bell peppers, then cut into pieces of 1.5 cm.
4. Peel the aubergine and cut into 2 cm pieces.
5. Cut the zucchini into 2 cm pieces.
6. Cut the tomatoes finely.
7. Heat the pot with olive oil, then add in the garlic.
8. Add the onion to cook for a few minutes.
9. Add the bell peppers to cook until softened.
10. Add the aubergine and zucchini.
11. Add the tomatoes and some water. Continue to simmer for 30 minutes.
12. Break the salty cod into pieces and add to the stew. Cook for 3 minutes before serving.
