Nutritionist Recipe - 17. Braised Eggplant with Salted Fish and Minced Pork

Ingredients (for 4):

  • Pork - 250 g
  • Eggplant - 1
  • Garlic - 4 cloves
  • Shallot - 4 
  • Chili - 2
  • Salted fish - 2 tbsp
  • Dark soy sauce - 1 tsp
  • Chinese yellow wine - 2 tsp
  • Sugar - 1 tsp
  • Oil - 1 tsp
  • Vinegar - 2 tbsp
  • Soy sauce - 1 tsp
  • Soy sauce (for marinate) - 2 tsp
  • White pepper powder - 1 tsp
Procedures:

1. Wash the pork and wipe dry, then cut into small pieces.

2. Remove the stem of eggplant and wash, then cut into pieces and soak in vinegar and water.

3. Peel the garlic and chop into finely.

4. Peel the shallot and cut in halves.

5. Remove the stem of chili and seeds, then cut into small pieces.

6. Remove the skin of the salted fish and bones, then cut into small pieces.

7. Heat the pan and add oil, then add garlic and shallot to saute.

8. Add salted fish and continue to stir-fry.

9. Add minced pork and continue to stir-fry, when the meat turns color, add Chinese yellow wine.

10. Add chili and eggplant and stir-fry for a short while.

11. Add a bowl of water, sugar, soy sauce and dark soy sauce, continue to cook until the eggplant is softened.

12. Serve on a plate.
