Located in the village of Fuisse, it is a
family domaine now directed by Christophe Cordier, producing white wines from
the Chardonnay grape. With 30 hectares spread over 8 villages, the domaine
invested in two superb gravity cellars, fully air-conditioned and
humidity-controlled.
The wine benefits from long ageing on
original lees, carried out in 3 ageing barrel cellars and 2 cellars containing
large barrel named foudres selected from the best French oak. Apart from his
own vineyards, Christophe purchased grapes from old vines in the best terroirs,
carefully picked by hand at perfect maturity.
Very short pruning, meticulous de-budding,
manual thinning of leaves, preservation of soil life and hand-picking are some
of the examples on the viticulture. Vinification using only indigenous yeast
and ageing on original lees to preserve the unique identity and purity of the
wines.
Gentle bottling is done using gravity,
without fining with only a very light filtration. Christophe is not afraid to
experiment, and having wines from the different AOC including Pouilly-Fuisse,
St-Veran, Pouilly-Loche, Macon-Fuisse, Macon-Vergisson, Vire-Clesse,
Macon-Loche, Macon-Milly Lamartine and Macon-Charnay.
I have recently tasted the 2011 Pouilly-Fuisse
Vieilles Vignes and below is my tasting note:
Appearance
Bright
and clear, it has light gold color, with watery rims and legs.
Nose
Clean, with
medium (+) intensity of citrus fruit of lemon, green fruit of ripe apple and
sugarcane, maturity notes of cereal, oak notes of butterscotch, kernel notes of
almond, autolytic notes of yeast. The wine is fully developed.
Palate
Dry with
medium (+) acidity, the wine has medium alcohol and medium body, demonstrating
medium (+) intensity of flavors including citrus fruit of lemon, green fruit of
ripe apple and pear, kernel notes of almond, autolytic notes of yeast. The wine
has a medium finish.
Conclusion
Good
quality Bourgogne with an intense nose of good complexity, the wine has nice
acidity and structure, with a fairly concentrated palate of typical varietal
characters, with also a decent length on the finish. Ready to drink now, the
wine is not intended for further ageing.
