Family Meal Recipe - 9. Chocolate Cake

Ingredient (for 4):

  • Dark chocolate, 60% cocoa - 175 g
  • Butter, at room temperature - 90 g
  • Egg white - 4 eggs
  • Sugar - 2 tbsp
  • Egg yolks - 1.5 eggs




Procedures:

1. Chop the chocolate into small pieces.

2. Half fill a saucepan with water and place over a low heat, then sit a metal or glass bowl over the pan so that the bottom of the bowl does not touch the water. Put the chocolate into the bowl.

3. Leave the chocolate to melt slowly, stirring occasionally with a spatula until smooth. Remove the pan from the heat.

4. Cut the butter into cubes and add to the hot chocolate.

5. Let the butter melt into the chocolate, stirring with the spatula.

6. Put the egg whites into a large bowl, then add the sugar. Use a balloon whisk or electric blender to whip the whites and sugar to a soft meringue. Do not allow the mixture to stiffen.

7. Pre-heat the oven to 200 degree Celsius.

8. In a separate bowl, whisk the egg yolks for a few seconds.

9. Pour the yolks over the meringue mixture, then fold together using a spatula or whisk.

10. Tip the meringue mixture into the buttery chocolate.

11. Fold everything together carefully with a spatula until even.

12. Spoon the cake mixture into a piping bag and snip off the end. If you don't have a piping bag, use two teaspoons instead.

13. Pipe or carefully spoon the mixture into circular silicone moulds about 12 cm across and 4 cm deep.

14. Bake in the oven for 12 minutes, or until risen and shrinking away from the edges of the moulds.

15. Leave to cool a little before removing from the moulds.

16. Serve the cakes warm.
