Ingredients (for 4):
- Olive oil - 2 tbsp
- Onion - 4 oz
- Mixed bell pepper - 2 oz
- Pumpkin - 8 oz
- Broccoli - 8 oz
- Egg - 3
- Flour - 1 tbsp
- Salt - 1/2 tsp
- White pepper powder - 1/4 tsp
Procedures:
1. Shred the onion.
2. Shred the bell peppers.
3. Break the broccoli into smaller pieces.
4. Cut the pumpkin into big cubes.
5. Blanch the pumpkin in hot water for 6 minutes. Remove and drip dry.
6. Blanch the broccoli in hot water until cooked. Remove and drip dry.
7. Mix the whisked egg with flour, salt and white pepper powder.
8. Heat the pan with olive oil, then saute the shredded onion.
9. Add in the bell peppers and cook for a brief while.
10. Add the pumpkin and broccoli.
11. Add the egg mixture and pan-fry at low heat until the base is set. Then flip over to cook the other side.
12. Cut into quarters and serve.
