Wineshark Cooking Class - Deep-fried Chicken 炸雞


Ingredients (for 4):

  • Chicken steak - 2 pieces (around 600g)
  • Ginger - 1 section
  • Garlic - 2 cloves
  • Soy sauce - 2 tbsp
  • Sake - 2 tbsp
  • Salt - 1/2 tsp
  • Flour - 4 tbsp
  • Tapioca starch - 4 tbsp
  • Oil - 200 ml
Procedures:

1. Cut the chicken steak into large pieces.


2. Marinate the chicken pieces with mashed ginger, minced garlic, soy sauce, sake and salt. 


3. Mix the flour and tapioca starch together.


4. Coat the chicken pieces with the mixed flour. 


5. Heat the oil to 180 degree Celsius, then put the chicken pieces in. Cover with lid and cook with medium heat for 3 minutes. Turning to low heat when steam seeps out from the lid.


6. Flip the chicken piece over and turn up to medium heat again. Continue to deep fry for 3 minutes without lid.


7. Drip off the excess oil and serve.
