Wineshark Cooking Class - Fried Medium Prawns in Tomato Sauce 茄汁煎中蝦


Ingredients (for 4):

  • Medium-sized shrimp - 8
  • Red and green chili - 1 each
  • Onion - 1/2
  • Garlic - 2 cloves
  • Shallot - 1
  • Tomato paste - 1 tbsp
  • Tomato - 1
  • Sugar - 2 tsp
  • Salt - 1/2 tsp
  • Worchestershire sauce - 1 tsp
  • Lemon - 1/2
Procedures:

1. Cut the legs, tips of head from the eyes, tail and spear of the shrimps. Remove the intestines and cut the shell at the back from the head to the third section.


2. Cut the red and green chili into pieces.


3. Cut the tomato into wedges.


4. Cut the onion into wedges.


5. Cut the shallot and garlic finely.


6. Pan-fry the shrimps.


7. Flip the shrimps and continue to pan-fry until 80% done.


8. Heat the wok with oil, then stir-fry the green and red chili.


9. Add the onion and continue to stir-fry.


10. Add the garlic and shallot finely, continue to stir-fry.


11. Add the tomato paste and mix well.


12. Add the tomato and shrimps. Continue to stir-fry.


13. Add in the sugar and stir well. Add salt and Worchestershire sauce. 


14. Serve and then squeeze in the lemon juice.
