Ingredients (for 4):
- Dory snapper - 1
- Spring onion - 2 sprigs
- Soy sauce - 1 tsp
- Dark soy sauce - 1 tsp
- Sugar - 1/2 tsp
- Chicken stock - 1 tbsp
- Chicken oil - 1 tbsp
- White pepper powder - dashes
Procedures:
1. Cut the white part of spring onion into shreds.
6. Heat a pan with 1/2 tsp of oil, then add the chicken fat to cook at low heat to extract the chicken oil.
7. Transfer the steamed fish to the serving dish, discard the jus. Pour the soy sauce on the side of the fish.
