Wineshark Cooking Class - Spaghetti Carabineros 西班牙紅蝦意粉


Ingredients (for 4):

  • Red prawn - 4
  • Spaghetti - 200 g
  • Tomato - 4
  • Onion - 1
  • Garlic - 4 cloves
  • Brandy - 10 ml
  • Tomato paste - 1 tsp
  • Seafood broth - 800 ml
  • Olive oil - 10 ml
  • Salt - 1/2 tsp
  • Black pepper finely - 1/4 tsp
Procedures:

1. Remove the head and shell of the red prawns, and then remove the intestines.


2. Remove the seeds of the tomato and then cut finely.


3. Cut the onion finely.


4. Cut the garlic finely.


5. Heat a pan with olive oil, and then add in the prawn heads and shell. Cook until fragrant. Then pour in the brandy and light it up.


6. Add the tomato paste to mix well, and then pour in the seafood broth. Cook for 20 minutes.


7. Drain the sauce out.


8. Heat the pan with olive oil, then add the garlic.


9. Add the onion finely to saute.


10. Add the tomato finely and continue to saute until the paste turns mushy.


11. Blend the mixture together with the prawn sauce. 


12. Boil a pot of water and then add the spaghetti in, follow the package instruction for the amount of time needed.


13. Drain the spaghetti and put on the plate, then pour in the prawn paste. Put the prawn on top.
