Wineshark Cooking Class - Berkshire Pork

Ingredients (for 4):

  • Pork chop - 4 pieces
  • Salt - 1/2 tsp
  • Black pepper finely - 1/4 tsp
  • Thyme - 1 tsp
  • Onion - 10 oz 
  • Soy sauce - 4 oz
  • Sake - 3 oz
  • Mirin - 2 tbsp
  • Black pepper finely - 1 tsp
  • Ginger - 3 pieces
  • Red chili - 1
  • Sugar - 3 tbsp
  • Sesame oil - 2 tsp
Procedures:

1. Marinate the pork chop with salt, black pepper and thyme.

2. Pan-fry the pork chop, keep warm.

3. Chop the onion into shreds.

4. Mix the soy sauce, sake, mirin, black pepper, ginger, red chili, sugar and sesame oil, then cook until the flavors are extracted.

5. Stir-fry the onion until softened. 

6. Add the sauce and continue to stir-fry for a short while.

7. Pour the onion and sauce on top of the pork chop.
