Wineshark Home Cooking - Black Pepper Hambagu 黑胡椒漢堡排


Ingredients (for 2):
  • Beef - 200g
  • Onion - 1/2 
  • Egg - 1
  • Flour - 1/4 cup
  • Salt - 1/3 tsp
  • Ground Nutmeg - dashes
  • Red wine - 2 tbsp
  • Tomato paste - 2 tbsp
  • Worchestershire sauce - 1 tbsp
  • Butter - 1/4 cup
  • Haricot verts - 100g
  • Black pepper finely - 4 tsp
  • Salt - 1/2 tsp + 1/4 tsp
  • White pepper powder - 1/8 tsp
Procedures:

1. Cut the onion finely.


2. Heat 1 tsp of butter at the pan, then stir-fry the onion until slightly brown in colour. Remove to cool.


3. Mince the beef. 


4. Add the whisked egg, flour, onion, salt and nutmeg to the minced beef. Mix well and knead until the patty is sticky.


5. Form into four spheres. Lightly press to form a disk shape.


6. Sprinkle black pepper finely on the patty.


7. Boil a pot of water, then add in 1/2 tsp of salt and haricot verts to cook for one minutes. 


8. Remove to drip dry, then add in 1 tsp of butter, and dashes of salt to season. 


9. Heat the pan with oil, turn to medium heat and put in the patty to pan-fry for 2 minutes.


10. Flip the patty over and turn to low heat. Cover with lid and continue to cook for 4 minutes. Remove to the serving plate.


11. Pour in red wine to the frying pan. Turn to low heat and cook until boiling.


12. Turn off the heat and then pour in tomato paste, Worchestershire sauce to mix well.


13. Turn on the heat again, and then add in butter, salt and white pepper powder to season.


14. Pour the sauce on the side of the serving plate, and then add in the haricot verts.
