Wineshark Recipe - 65. Duckling with Orange Sauce

Ingredients:
  • Duckling - 1
  • Butter - 2 oz
  • Carrot - 2 oz
  • Onion - 2 oz
  • Celery - 1 oz
  • Bay Leaf - 2
  • Thyme - 2 tsp
  • Brown stock - 500 ml
  • Orange - 3
  • Lemon - 1
  • Salt - 4 tsp
  • White pepper powder - 1 tsp
  • Corn starch - 1 oz
Shred the vegetables, add bay leaf, thyme and some cooking oil, then squeeze till the juices comes out.

Clean the duckling and use tissue paper to wipe dry the skin. Then sweep some butter onto the skin, and put the vegetables inside the duckling.

Put inside pre-heated oven for about 30min using 230 degC.

Once it cools down, cut the duckling in four, remove the bones.

Orange pulps are cut into pieces, with the skin cut to thin shreds. Peel the lemon skin and shred also.

Put the duckling juices with the brown sauce, then filter to get only the sauce.

Use butter to sauteed the orange and shredded lemon peel, then add the duckling juices. Add seasonings and corn starch. Pour on top of the duckling and put the orange as side-dish.

Wineshark Recipe - 64. Berkshire Pork with Mashed Pumpkin with Cheese

Mashed Pumpkin with Cheese ingredients:
  • Pumpkin - 12 oz
  • Bulb garlic - 3 pcs (with skin)
  • Salt - 1/2 tsp
  • Black pepper finely - 1/4 tsp
  • Parmesan cheese - 2 tbsp
Peel off the skin of pumpkin, then put in oven for 20-25 min under 220 degC.

Put the bulb garlic in oven till it is completed cooked. Then squeeze the pulp out.

Mash the pumpkin and garlic together, then add the seasonings.

Tonkatsu sauce:
  • Soy sauce light - 4 oz
  • Sake - 3 oz
  • Mirin wine - 2 tbsp
  • Black pepper finely - 1 tsp
  • Ginger - 2 slides
  • Red chili - 1 pc
  • Sugar - 3 tbsp
  • Sesame oil - 2 tsp
Cook all the ingredients together, and then filter to keep the sauce.

Berkshire Pork ingredients:
  • Berkshire pork - 1 lb
  • Salt - 1/2 tsp
  • Black pepper finely - 1/4 tsp
  • Thyme - 1 tsp
  • Onion shredded - 10 oz
First marinate the pork, and then panfry.

Saute onion and then add the Tonkatsu sauce, pour on top of pork.

Wineshark Recipe - 63. Cream of Chickpeas Soup

Ingredients:
  • Vegetable oil - 2 tbsp
  • Onion shredded - 6 oz
  • Celery - 2 oz
  • Bacon - 2 strips
  • Bay leaf - 2 pcs
  • Chickpeas - 10 oz
  • Stock - 2 lb 8 oz
  • Salt - 1 tsp
  • White pepper powder - 1/4 tsp
  • Dry white wine - 1 oz
  • Whipping cream - 2 oz
First saute the onion with the vegetable oil, then add celery and bacon for a short while. Add chickpeas and bay leaf.

Add stock to cook for another 20 min, then cool down the soup before put in a blender.

Once it is fully blended, re-heat the soup and add seasonings, white wine and cream.
